This game is Not Yet in early access But I have limited playtime in the demo, Early Access release, the information below is per the developer/steam page or whatever else is available.

Survival Elements
Last Hope does not have any real survival elements to overcome, you must swap out your gas mask filter every few minutes, there is no eating or drinking, temperature is not an issue, there does appear to be some environmental hazards, that can be overcome with upgraded gas mask and hazmat suit.
Base Building
The game does not have custom base building but your bunker can be upgraded,
Other than unlocking the ammo crafting, I did not experience this aspect.
Crafting
Crafting that I had unlocked was done through and npc. you gather the materials and essentially trade them for the item you are looking for.
Looting
All the looting I found was crafting materials, I did not find any completed items.
Combat, Main Enemy Types
The name kind of gives it away here but, yep ZOMBIES.
Characters and Leveling
I did not find any way to upgrade my character or do leveling.
Creature Taming and Mounts
I did not see any creature taming or mounts/vehicles that can be operated by the player.
Weather Impacts on Gameplay
I did not experience any weather that impacted gameplay (or at all).
Game Modes
Currently, there are no game modes.
Controls
This is a top down game with standard controls, there is no camera control.
Map
The map is a hand crafted map.
Hours
It only took about an hour to get a feel of how the game played.
Over Gameplay Difficulty
The game is not difficult to play, it is a standard shoot the zombies while traveling to the next location.
